Smoky Pulled Pork
By Amy Currie
- 6 lb Pork butt, bone-in
- 1/4 C Smoked paprika
- 1 T Salt
- 1 T Dry mustard
- 1 T Brown sugar
- 2 Garlic cloves, minced
This recipe for pulled pork couldn't be easier. A secret ingredient gives it its smoky flavor and cooking it "low and slow"in the oven makes it falling apart tender.
- The secret to getting all that smoky flavor is in the smoked paprika in the dry rub. In a bowl combine smoked paprika, salt, brown sugar, dry mustard and chopped garlic.
- Rub the dry rub all over the meat, cover with foil and bake in the oven for about 5 hours, checking after about 3 hours. (You can prepare the meat a day in advance)
- After about 5 hours the pork will be golden brown and falling apart. Remove from the roasting pan, throw out the pan and rest the pork for a few minutes to cool before you begin pulling it.
- Using two forks ( or your clean hands) pull the pork. Serve with barbecue sauce in a sandwich or on its own. It's delicious!
